01 · The Process

What nitrogen
actually does.

Cold brew and espresso are forced through a fine-mesh restrictor plate under pressurized nitrogen, and because the gas can't dissolve the way CO₂ does, it shears into thousands of microscopic bubbles that give the pour its cascade and its head.

Tiny nitrogen bubbles are denser than the liquid, so they fall and drag visible currents down the glass before settling into a stout-like head on top.

The nitrogen infusion breaks the drink down into a velvety, micro-fine texture that blends every flavor together into one smooth, creamy pour instead of layers sitting on top of each other.
